Matcha Vanilla Pistachio Cake

Guys,

I havent posted a raw cake recipe for ages! so upon special request I am sharing this pistachio matcha cake with you. I finished the last piece today and tought why not let you try it too. This recipe will make two tiny cakes so be sure to share it with someone special as you wont have enought o share with anyone else.

So long story short here it is.

By the way make sure to buy ceremonial grade matcha as it has a much subtler and more refined taste.

Instructions
  1. Place the first 4 ingredients in a food processor until well combined. If too thick add a little water
  2. Now press into the bottom of a two 2.5" cake tins. Refrigerate
  3. Now place the next five ingredients into a blender and blend several times unt very smooth.
  4. Divide the the mixture into two bowls. In one add the pistachios. In the other one add the matcha. Stir until incorporated.
  5. Spoon the white chocolate mixture onto the base of the cakes. Refrigerate until set.
  6. Now spoon the Matcha mixture on top. Refrigerate until set

So its nearly Christmas and while I am writing this my mulled wine is slowly heating up on the stove.Youd think Id be sharing a lovely Christmassy treat with you now but I am not. I have been so busy with all sorts of things including getting my kitchen fixed up that I havent created anything Christmassy! How terrible is that?

I know I know really terrible. And you know what Ill try my best but I cannot guarantee anything will come out of my kitchen before next weekend, because tomorrow I am off for my Christmas party and then off to Paris for two days. My kitchen is still under construction….but as I said Ill try my best.

SO for now youll have to make do with these absolutely delicious Pecan Tahini caramel bars.

Instructions
  1. For the nut layer process the first 3 ingredients in a food processor until crumbly and sticky
  2. Layer the 100g pecans on top and refigerate
  3. Now make the fudge by placing the last three ingredients in a pot and heat gently stirring all te time until the mixture gets well combined and sticky and slowly starts to crumble and separate.
  4. Take of the heat and drain off the excess oil (btw I use that oil which is now sweet to fry pancakes). Make sure you to cool down the mixture and give it a good squeeze to drain all the oil out of it.
  5. Spread on the nut mixture and refrigerate until set.
  6. Enjoy

Raw Vegan Gingerbread Cheesecake

So there are less than three weeks to Christmas and I have eaten a lot of gingerbread and gingerbread men. This cheesecake is still sitting in my freezer and I think its just too yummy and pretty to eat, Does that make sense to anyone. I just fear that when its gone I wont have the time or occasion to make it again.

If you know me (which you probably don’t) then you know I love cheesecake, but what I haven’t shared with you is my looooove for spiced teas. I love Chai and I love adding pepper to my tea lattes to give them that little bit of a kick. So what is more Christmassy than gingerbread? And what better combination is there, than a gingerbread cookie flavoured tea and cheesecake?

I recently tried the Santa’s babe Pepperkake Rooibos tea by Tea and the Gang and totally fell in love with it. It is so so flavoursome and that bit of spicy that I just cant stop drinking it.

So I decided to put it in my cake. It came out so delicious (if I may say so myself) that I couldn’t believe it. So here it is. The Raw Vegan Gingerbread Cheesecake:

Instructions
  1. For the base place the oats in a medium sized bowl and add the peanutbutter caramel sauce and cinammon. Stir until well combined.
  2. Now press this mixture into the bottom of a 20cm cake tin with removable bottom (very important, otherwise you wont get the cake out)
  3. Refrigerate while you make the cheese filling.
  4. For the filling place all remaining ingredients except the coconut oil into a food processor and blend until very smooth, scraping down the sides in-between, this might take a while depending on how powerful your foodprocessor is.
  5. When nice and creamy – start streaming in the coconut oil while still blending.
  6. When lovely and smooth, pour all into the cake tin and freeze for about two hours. Defrost for about 1 hour before serving. If totally frozen, which would take longer than two hours, defrost for longer.

Every year I vow to myself that I will start buying gifts in August, yes you heard right August. Because then I can plan and budget ahead, (I am an accountant after all).

And then August comes and goes and it’s so warm and sunny and no way am I starting to buy Christmas presents now. Also people change their preferences and might see something they really like closer to the festive season. It is also impossible to buy anything for kids because they want something different every week or day.

Have you got one of those special guys in your life that will not use any kind of skin product that looks too much of a “Product” to be used by a man? Well I have. And I was struggling to make him use moisturiser and any sort of skin care. Until I found Bulldog Skincare. I was looking for a cruelty free and vegan brand that didn’t cost the world and that I could get my hands on quickly, (I was just as organised last year haha) and just by luck stumbled across them in my local pharmacy. Norse London Double Edged Razor

Another great gift for the old-school man (maybe dad or your hip other half, or just someone you know would appreciate a great gift) in your life is a double edged razor. My dad has had his double edged razor for over 25 years now and I think it’s time for an upgrade. Over the years we have gifted him electric shavers, semi-electric ones and all sorts of other shaving equipment but he has never given up on his double edged razor. It is great because its plastic free which is great for the environment and you only replace the blades. It reduces waste and saves you money.

You can get stylish ones from Norse London with a stand for the razor and brush. As mentined on their website the brushes are synthetic. All at a very reasonable price and I know my dad will love it, maybe yours will too.

Deciem – The abnormal Beauty company
The Ordinary, one of the Deciem beauty brands was one of the the first products I got when I went vegan and cruelty free. I was looking for a skincare products forever and actually my partner’s sister told me about them. I checked the company and found they were cruelty free and a lot of their products vegan. There are over ten brands under the umbrella of Deciem ranging from skincare to haircare to food supplements for beauty. When you click on a product you are given a sort of dashboard that states whether the product is vegan, nutfree, waterfree, oilfree or similar.
So, when the Ordinary was one of the first brands I purchased, and at a very reasonable price, Hylamide was the next. Its a bit a more expensive but I absolutely loved their cleanser and pore reduction products. And there are so so many I will need to try. I could spend all day browsing through their products.
I think their products would be a perfect gift for the lovely lady in your life, mum, sis, wife or girlfriend.

Guys and Girls! Do I have to say anything other than “HANDBAG”? Most ladies, I know very few who wouldn’t, would love a bag for a present. I am not the most stylish or fashionable person in the world, BUT I do looove bags. I am sorry if I am being too materialistic and superficial now but I looove bags. And I absolutely adore Labante London Bags. I have two in my collection now. One is a small black crossover bag with a golden chain strap and the other is a lovely brown tote with a pink inside, featuring detatchable side pockets. I am definitely planning on getting more. Do you want to go #zerowaste? The first step I took when I started my journey to #zerowaste, I’m long not there but I am trying, was getting rid of my clingfilm and start wrapping my kids’ sandwiches in the Rolleat sandwich wraps and snackbags. They come in various fun designs for kids and adults alike. My kids love their wraps and bags and I really couldnt go back to using clingfilm. It is a great way of reducing your single use plastic products and you should give it a go. Get some for your kids as a stocking filler. They’ll love them.

A new Irish Company making bedding, blankets, scarves and throws from the finest, hand-picked organic cotton creating luxuriously soft products.

The company is 100% Fairtrade certified meaning fair wages and safe working conditions for all of their workers. I met one of the owners at a health blog event and was lucky to see the products. They are absolutely beautiful and luxurious and can be purchased here.

With our increasing population and with it the increasing amount of waste and plastic, we should all do something to save our planet for our future generations. Please consider giving to charities such as Plasticoceans and Oceanconservancy, two of the many charities that try to save protect and educate about our oceans and the plastic pollution that endangers the life in them.

And last but not least and the reason why I went vegan, are the animals. Please give to the many animal charities such as Eden Farmed Animal Sanctuary (here in Ireland) or any other maybe local animal charity in your country.
