So, do you think you can rely on the Irish weather or the Irish weather forecast?
Nope, you cant.
This Saturday we were supposed to get beautiful sunshine and 20 degrees. Did we get it?
No we did not. It was a freezing horrible day and so so windy. But the optimist that I am I got up early and made beautiful popsicles for my little monkeys. We ate them anyway with big jumpers on.
So if you feel summery and in the mood for some popsicles the recipe is below.
Coconut Cream and Berry Popsicles
Perfect for a hot summer day
Beat the aquafaba with a mixer until stiff. Gradually add the sugar until it becomes a shiny marshmallow fluff
Now beat the coconut milk with a mixer until it is fluffy
Gently combine the two creams
Mash all your berries and mix 1 tbsp. into the cream mixture
Spoon the remaining berry mixture into the bottom of each popsicle mould.
Spoon the cream on top and freeze until well set.
